Francois Chidaine Touraine Sauvignon

This Sauvignon Blanc is an excellent value from a deeply conscientious producer. Francois Chidaine practices biodynamics in his vineyards and takes the health of his soil and the environment to the next level by rotating cover crops and avoiding plowing. The resulting wine has a rich texture with a distinctly stony finish. The nose is delicate mix of white grapefruit, sage, and fresh white flowers, and the palate is fresh and rounded, only faintly herbal rather than overtly vegetal as some Sauvignon Blanc can be. The wine was aged and fermented in stainless steel with indigenous yeasts, and spent several months on the lees before bottling. Well balanced and a great pairing for sautéed fish or vegetables and certainly with goat cheese
